Caribbean Blackened Shrimp Salad with Mango Lime Dressing
Serves 4
Meat: 24 shrimp (6 each)
Produce:
1 c Black beans
1 bunch fresh cilantro
15 oz Mandarin Oranges
1 Large mango
½ Red Onion diced
2 Red Bell Peppers diced
18 oz Romaine Lettuce
Seasonings/Condiments:
1 ½ tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried thyme
1 tsp ground black pepper
1 tsp cayenne pepper
1 tbsp Honey
1/3 c Lime Juice
2 tbsp Brown Sugar, light or dark
7 tbsp Olive oil
½ Ground Cumin
¼ ground coriander
Directions:
- Rough chop romaine lettuce
- Dice up red onions and bell peppers
- Drain black beans and mandarins oranges
- Arrange all toppings as desired on top of romaine lettuce or toss all together with dressing then garnish with chopped up cilantro
For Shrimp:
- Marinade with olive oil and blackened seasoning for 30 minutes: Paprika, Garlic Powder, Onion Powder, dried Thyme, Ground Black Pepper, Cayenne Pepper
- After shrimp is marinated saute in pan with olive oil
For Dressing:
You will need to combine all ingredients either in a food processor or blender
- One large mango diced into chunks, lime juice, honey, cumin, salt, coriander, cayenne, olive oil
