Caribbean Blackened Shrimp Salad with Mango Lime Dressing

Serves 4

Meat:  24 shrimp (6 each)


1 c  Black beans

1 bunch fresh cilantro

15 oz  Mandarin Oranges

1 Large mango

½  Red Onion diced

2 Red Bell Peppers diced

18 oz Romaine Lettuce


1 ½ tbsp paprika

1 tbsp garlic powder

1 tbsp onion powder

1 tbsp dried thyme

1 tsp ground black pepper

1 tsp cayenne pepper

1 tbsp Honey

1/3 c Lime Juice

2 tbsp Brown Sugar, light or dark

7 tbsp Olive oil

½ Ground Cumin

¼ ground coriander


  1. Rough chop romaine lettuce
  2. Dice up red onions and bell peppers
  3. Drain black beans and mandarins oranges
  4. Arrange all toppings as desired on top of romaine lettuce or toss all together with dressing then garnish with chopped up cilantro

For Shrimp:

  1. Marinade with olive oil and blackened seasoning for 30 minutes: Paprika, Garlic Powder, Onion Powder, dried Thyme, Ground Black Pepper, Cayenne Pepper
  2. After shrimp is marinated saute in pan with olive oil

For Dressing:

You will need to combine all ingredients either in a food processor or blender

  1. One large mango diced into chunks, lime juice, honey, cumin, salt, coriander, cayenne, olive oil
